I’m always trying to find new ways to eat more protein. I find that high levels of protein, throughout my day, helps me to focus better and snack less. One serving of Seitan (3 oz.) contains 27-29g of Protein. So one serving will have you half way to your daily intake.
COUS COUS SEITAN SALAD
3 Cups of Cooked Cous Cous
1/3 Cup of diced Purple Onion
1 Can of Baby Corn
2 Cans of Chick Peas
1 Cup of diced Seitan
-Prepare cous cous as directed on the package. A flavored version is best. Once the cous cous is cool, stir in onion and seitan.
-Cut baby corn into small pieces 1/2″ to 1″. Fold into mixture, along with well rinsed chick peas.
CORN & SEITAN SOUP
1 Tblsp. Vegan Butter or Oil
1/4 Cup diced Purple Onion
1 Cup diced Seitan
1 Cup frozen Corn kernals
1 Carton of Imagine Creamy Harvest Corn Soup
Sea Salt and Group Pepper (to taste)
-Saute purple onion in vegan butter for 3 minutes. Then stir in diced seitan and saute for 3 more minutes. Next stir in corn and saute full mixture for another 5-7 minutes.
-Stir in corn soup and bring to a simmer. Salt and pepper to taste.
