I used the recipe from Hot for Food‘s YouTube channel.  They have amazingly delicious vegan recipes and the sauces they create for this recipe are also delicious but too spicy for my palate.

I changed things up by creating my own sauces, which are below.  So if you plan to make these wings & knots (and you totally should cause they are mouthwatering), start out by watching Hot for Food‘s video and when it’s time to create the sauces just sub in mine instead.

Or, if you’re serving a crowd, make them all!!!

^^ I used Rich & Creamy Melt Organic Buttery Spread as the base for both sauces.  Melt is clean with a slightly sweet flavor. Of all of the vegan “butters”, Melt is the most authentic.  It’s creamy like butter, not oily like margarine.

^^ Parmesan-Garlic Cauliflower Knots which taste like Garlic Knots.  Cheesey-buttery-garlicy goodness.

PARMESAN-GARLIC KNOTS SAUCE

ingredients:

1/2 C. of Rich & Creamy Melt Organic Buttery Spread (vegan butter)

2 tsp. Garlic Powder

1 tsp. Onion Powder

1/2 tsp. Black Ground Pepper

Sea Salt, to taste

Vegan Parmesan (powder)

instructions:

  1. In a small pan over low heat, melt the Melt.
  2. Remove from heat and stir in remaining ingredients, except the vegan parm.
  3. Coat your cauliflower knots with the sauce and heavily sprinkle with vegan parm.
  4. Now continue following the recipe by Hot for Food.

^^ Mild Buffalo Cauliflower Wings are amazing!  Even though they’re mild, they still have a kick.  If you’re looking for less kick then add less hot sauce and make up the difference by adding more tomato sauce.

MILD BUFFALO WING SAUCE

ingredients:

1 C. of Rich & Creamy Melt Organic Buttery Spread (vegan butter)

3/4 C. of Hot Sauce

3/4 C. Tomato Sauce (not pasta sauce)

1 1/2 tsp. Garlic Powder

1 1/2 tsp. Apple Cider Vinegar

3/4 tsp. Tamari

Sea Salt and Black Ground Pepper, to taste

instructions:

  1. In a small pan over low heat, melt the Melt.
  2. Remove from heat and add all ingredients to the pan.  Using an immersion blender, mix thoroughly for 3-5 minutes.  Using the immersion blender keeps the sauce from separating and means you can keep it in the fridge for a week.
  3. Now continue following the recipe by Hot for Food.

^^ The batter is crunchy and chewy, while the encased cauliflower is stringy and meaty.

^^ Tip: For a more intense color, try using purple cauliflower instead of white.
