What Vegan Glampers Eat

what vegan glampers eat coverSMORES

We take smores seriously.  Dandies are vegan (mainstream marshmallows contain pigs) and super delicious!  Cut them in half so they goo easier.

Justin’s Dark Chocolate Peanut Butter Cups take smores to the next level.

Lay everything out on foil.  Whenever grilling away from home, we always line with foil to prevent our food from touching the grill which others have cooked animals on.

Place another Graham Cracker (Nabisco original are vegan) on top and keep a close watch.  Use a low heat or after cooking, turn the heat off and let the residual do the work.

GRILLED PANINI

DSCN5589-1

Cut a loaf of bread in half so it resembles a giant bun.  I usually buy a flatter loaf from our local bakery such as a semolina bread.

Now layer the bottom half with sliced Daiya Jack Cheese, Slices of Onion, Sliced Seitan, Whole Baby Peppers, Asparagus Spears, another layer of Daiya Jack Cheese and place the loaf top on.

Wrap it tightly in foil.  Now pop it on the grill with a medium-low heat.   Be sure to roast your veggies first or they won’t cook through.  DSCN5584-1

GRILLED VEGGIES MARINATED IN SPIEDIE SAUCE

IMG_1027

Baby Dutch Yellow Potatoes, Mini-Yellow Onions, Baby Cremini Mushrooms, Romaine Hearts, Mini Sweet Peppers all go in ziplocks with Spiedie Sauce (or the vinaigrette of your choice).  Marinate for hours while enjoying the outdoors.

Spread everything out on the grill.  If you can, place the Romaine and Mushrooms on the outer edges.  The potatoes will take the longest to cook, followed by the onions and peppers.

When the Romaine is ready, move it to the top to keep warm.  When the Mushrooms, Onions and Peppers are almost finished, move them to the edges and turn the heat off in those areas.  Keep turning the Potatoes until they catch up.

FOIL-PACKET GRILLED HASH

Purple Potatoes, Baby Peppers, Onion, Asparagus, Seitan and Corn.  Hearty, healthy and so scrumptious.  Chop it all up.  Pop it on a sheet of foil.  Fold it over and fold the edges over.  Stick it on the grill and sit down with a couple of micro-brews, as it slow cooks.

BREAKFAST

There is nothing more delightful when waking up in the forest than a cup of small-batch-organic-fairtrade coffee made in a french press.

There’s nothing like firing up the grill first thing in the morning when the mist is still resting in the tree canopy.
